Garlic & Herb Egg White Sandwich


I love The Laughing Cow Cheese brand, most especially their Garlic & Herb soft cheese shown here. They taste so indulgent but at only 35 calories a wedge are something that you don't have to feel guilty about eating. I mix them into pasta, spread them on crackers, and eat them on eggs. This is one of my favorite things to make for breakfast. Everyone one says that breakfast is the most important meal of the day and I believe this is true. I workout first thing in the morning, usually running, and by the time I get back I am ready to eat a good breakfast. Most mornings I eat a big bowl of plain oatmeal with fresh or frozen berries mixed in and a sprinkle of cinnamon (yum, yum). A few times a week I like to make this egg sandwich. It's full of protein and fiber. I pair it with some yogurt for another dose of protein and calcium. There is no better way to start your day than with a great workout and then a healthy breakfast.

Garlic & Herb Egg White Sandwich

2 slices whole wheat bread (I use the Oroweat Double Fiber)
1 Garlic & Herb Laughing Cow Cheese Wedge
2 egg whites (Eggland's Best are the best!)
salt & pepper

Heat a small non-stick frying pan over medium heat. Whisk egg whites until foamy. Toast bread, preferably in the toaster oven. Make sure not to toast too brown as they will be returned to toaster oven one more time. Spray pan with cooking spray and pour eggs in. Let sit for a few seconds until they start to set up. Mix them around some more to scramble and continue until cooked through. Spread cheese onto toasted bread slices and top with eggs.


Sandwich together and return to toaster oven to heat through for a minute. Watch to make sure toast doesn't burn.
