Dinosaur Eggs
Easter is one of my favorite holiday's. I think it is because I love Spring and get so excited when the weather is warming and flower's are blooming. Easter is also a fun time for kids with eggs coloring, egg hunts, and bunnies bringing baskets full of goodies. Coloring eggs is a blast, messy sometimes but still fun. I saw this idea over at Our Best Bites and knew that I wanted to try it out. I've never seen eggs dyed this way but loved the way they looked. They turn out to look just like dinosaur eggs, way cool! Just a little something different to try other than just coloring the shells. Something else that was fun was turning those colorful eggs into a rainbow egg salad. My daughters love egg salad and making it rainbow colored just pushed it way over the edge for them. They were so excited. So to make this just take your hard boiled eggs and crack them on the counter gently to make little cracks all over the egg.
Then take liquid food coloring and color some water. I used Red, Blue, Yellow, and Green. Just a note, Yellow didn't show up very well for me. I like the brighter colors best.
Then you set them in your fridge to color over night. Remove the eggs and rinse them off with water. Now you will be able to crack some of the shells off to reveal the dinosaur eggs.

Then of course you could make some Rainbow Egg Salad if you want.

Garlic & Herb Egg White Sandwich
I love The Laughing Cow Cheese brand, most especially their Garlic & Herb soft cheese shown here. They taste so indulgent but at only 35 calories a wedge are something that you don't have to feel guilty about eating. I mix them into pasta, spread them on crackers, and eat them on eggs. This is one of my favorite things to make for breakfast. Everyone one says that breakfast is the most important meal of the day and I believe this is true. I workout first thing in the morning, usually running, and by the time I get back I am ready to eat a good breakfast. Most mornings I eat a big bowl of plain oatmeal with fresh or frozen berries mixed in and a sprinkle of cinnamon (yum, yum). A few times a week I like to make this egg sandwich. It's full of protein and fiber. I pair it with some yogurt for another dose of protein and calcium. There is no better way to start your day than with a great workout and then a healthy breakfast.
Garlic & Herb Egg White Sandwich
2 slices whole wheat bread (I use the Oroweat Double Fiber)
1 Garlic & Herb Laughing Cow Cheese Wedge
2 egg whites (Eggland's Best are the best!)
salt & pepper
Heat a small non-stick frying pan over medium heat. Whisk egg whites until foamy. Toast bread, preferably in the toaster oven. Make sure not to toast too brown as they will be returned to toaster oven one more time. Spray pan with cooking spray and pour eggs in. Let sit for a few seconds until they start to set up. Mix them around some more to scramble and continue until cooked through. Spread cheese onto toasted bread slices and top with eggs.

Cup Eggs
We love to eat breakfast foods for dinner. I'm sure many of you do. It seems that most breakfast foods are simple to make. If you need to get dinner on the table fast this is a good route to take. Eggs are so healthy. One egg (who stops at just one) contains over 6 grams of protein. They also provide several other key nutrients like vitamin A, E, Lutein, and Folate. They are so versatile and it is fun to come up with creative ways to use them. This is a fun way to get your kids to eat eggs. We call them Cup Eggs, kind of like cupcakes. I love to use my muffins tins for foods other than muffins and cupcakes. Your kids will enjoy helping to make these too. I used Pillsbury brand biscuits Simply line. They are free from all that artificial junk that is in all our packaged foods now day. You could add other things into the eggs like bacon, mushrooms, broccoli, spinach, ham, etc. My kids prefer things more on the plain side for these so I just keep it simple.
Cup Eggs
1 package of refrigerated biscuits (10 count)
3 eggs
3 Tbsp milk
1/3 cup shredded cheddar cheese
salt and pepper to taste
Preheat oven to 400F. Grease a regular size muffin tin really well with cooking spray. Separate your biscuits and roll them flat with a rolling pin on a lightly floured surface. Place them into your muffin tins. This will only make eight so you will have 2 biscuits left over. I just buttered them, sprinkled them with cinnamon sugar and baked them right along with the Cup Eggs.
Bake for about 12-15 minutes until done.
